These apple everything-free cookies had a strange grainy aftertaste. Which is a shame, because they're almost a win otherwise. Soft, tasty, gluten- and dairy- and tyramine-free. But I'm done with them once this box is emptied. Maybe I'll bake for myself next.

Anyone here have cake or cookie recipes where you can substitute wheat flour for just one thing? I mean, not 1/2 oat and 1/2 rice, or needing to add xanthan gum?

They don't even have to be wheat-free versions of anything. They can just be what they are.

Tangentially, can you label yourself allergen-free? Wouldn't one just mean "so far"?

There's a recipe for a quinoa cookie thing on the side of the package of quinoa flakes I have. It sounds like it would come out kind of like oatmeal cookies. I haven't tried it yet but I plan to.

ita, if you can tolerate spelt, I have had pretty good success in cookies and waffles with a 1-to-1 substitution of spelt flour for wheat. It is fluffier than wheat, so the texture is a little off, but not bad. It doesn't have much gluten, so bread and stuff would be more affected.
