I will say that Zuko's story is like five thousand times more compelling than Anakin Skywalker's, and told in one-fiftieth the screen time.

So much this. The DH and I said that right away. Except, of course, that Sokka is a competent fighter and his inventy ideas are usually good. So while he gets slimed a bunch, and is having to fight without bending, he's not a total butt-monkey.

Also, animals like Sokka. Which is cool.
Just watched "Bitter" and "Library." At the end of Bitter, the DH said of Zuko, "That boy has a lot of pain." At the end of "Library" I said "See? Sokka rocks!"
And Mal, as usual, said, "More Katara?"

After you finish season 2, you'll have to watch "The Angst, starring Prince Zuko." Bookmark it! You're mostly good to go, but the last thirty seconds totally spoils the finale.
