If Bo can now have sex without weakening people, it seems they don't even need to have half of that discussion. She can just turn off the power-drain sometimes.

Well the point is not killing people is done by restraining how much sex she has, stopping before she or the other person is satisfied. I guess she could stop weakening the cop, if she knew she was weakening him, by the same thing - stopping short of the full all out sex they love. I suspect they would both rather have mind blowing sex less often than just good sex more often. But in terms of emotional intimacy, maybe you are right. Or they could mix and match. Restrained sometime, unrestrained sometimes, just keep the total combination sufficient so she did not weaken him. Which would still require sex with other people to keep up her strength, especially if she is going to require healing regularly.

Up until this week, she didn't seem to be in control of that of stopping in time. Now she is. If that was the problem with sex with the cop, it seems to be very underway to being solved, and he knows that. If it's not the problem, then I'm not sure what is.
The problem with the cop is that she is "taking too much".
But apparently from the cop's conversation with the Siren he really likes her "taking too much". approximation:"Remember that nymph". Siren makes appreciation noises. "Lost her number and I don't even care." So if she wants to not weaken the cop but continue to see him romantically she has two choices. As you say, she can stop in time. Or she can't not stop in time, but see him less often. In either case she will get less sexual energy from him and need to see other people. That is true in general. She can't get all she needs from one fae (unless that fae can take more than the cop). She certainly can't get all she needs from one human. If she is not going to kill, she is going to have to date multiple people.
