My name is pronounced exactly like the -ita in Rita or senorita, but the Quebecois pronunciation was much longer, more like ee-tuhh, sort of fading off. I pronounce it very crisply and with a definite 'a'.

Well, French has no lexical stress, so the two syllables should have equal weight.

Spanish stresses the penultimate when the word ends in a vowel and there are no accents, so that's where the weight is in my name. In Quebec it kinda sounded like stress on the end because they spent so damned long on it.
