Tep, in your shoes I would be tempted to quit the committee and then offer your paid services to create the newsletter just like he wants it at an hourly rate that is at least (fair market rate)+(asshole surcharge) just to find out if it's the fact that you are volunteering that makes him see your work as unprofessional.
