Really, the coughing can stop anytime now. I've been a good girl and taken the Mucinex (and refrained from smoking), but still the cough, she persists.

It's a recipe that's part of the Weight Watchers Core plan (to make it completely core, the applesauce needs to be sugar-free, and the sugar should be replaced with fructose or splenda) -- they're dense but not insanely so, and pretty yummy.
Fruit Muffins
Into a large mixing bowl put the following:
2 cups 9 Grain Cereal [this is just a fiber-y blend of grains -- I found it in the oatmeal section of the cereal aisle -- in a bag]
2 cups of oatmeal
2 cups applesauce
2 cups ff plain yogurt
4 eggs
2 tsp vanilla
Mix all together and allow to soak for about 20 minutes
Meanwhile, mix together the following:
2 cups oatmeal [you can substitute uncooked Cream of Wheat cereal for 1 cup of the oats -- since Cream of Wheat has a finer texture, it is -- sort of -- "flourlike"]
1 tbsp baking powder
2 tsp baking soda
1 tsp salt
1 cup sugar (or Splenda) [if you use fructose, cut it down to 1/2 cup]
2 tsp cinnamon (or any mixture of spices you enjoy)
Add the dry ingredients to the moist and stir just until all is moistened. Add 1 cup of blueberries (frozen are fine)
Spray muffin cups with fill them to the very top (they do not rise). Bake at 375F for 20-30 minutes.

I cut the recipe in HALF, and it made 18 regular-sized muffins. I'm guessing it would make 8-9 jumbo muffins.

Those sound good, but god, are you making like 9,000 muffins? 2 cups of cereal, 4 cups of oatmeal, 2 cups of apple sauce, 2 cups of yogurt, 4 eggs? Those are hard core numbers.
