Going by my iPod Touch, there's no list of all the apps anywhere--it all has to be organised somehow on your home pages. Is that the same on the iPad? Huh.
And, yes, the apps all need to be organized or not but there is no list.

Ooh, thanks for the description, Cass. I didn't realise until you mentioned it that I had control over what apps are in the bottom row. And I guess I can't get to the third page until there are some icons on it--most Android skins will let you roll onto blank pages.
I have at least two skins on both my Android devices. The initial skin shows my newbieness, where pretty much every app I used more than once was on a home screen somewhere, and they were barely organised. The second, custom skin, is much more sparely organised, with better use of folders (my tablet's stock skin doesn't even allow folders--I guess they figure five screens of a gazillion icons was enough--but what about widgets?), and much better organised widgets, on top of the general better functionality of the skin itself. It's been an interesting learning curve.
-t, you cook from the phone? I just downloaded the CI app onto my iPod, now that you mentioned it, but I really don't use the device for much more than a music player. My god, I'd love that in a tablet aspect. I wonder if there's anywhere I can go register my desire for it on Android, Honeycomb/ICS precisely? Still, having my bookmarked recipes that portable is a good step ahead, even if I have to make an effort to remember to haul out the iPod before I cook.
And my iPod only has two screens. I'm assuming iPhones have more, right?
iOS will give you as many screens as you need. I'm down to just two now that I've finally started using folders.
Moving the phone out of the dock was the first thing I did when I realized you could move those apps. Right now I have Safari, Mail, Messages, and Music.

By default yes, but you can manually drag an icon onto a new screen if you want to.
[eta: Upon testing, how it works is when you start moving apps around, it gives you a new blank screen automatically. When you exit the edit mode, any empty screens disappear.]
You can also arrange your apps in iTunes, which is usually easier than moving them around with your finger on the screen.

ITunes backs up your apps that you've bought (the same way Android Market does). Are you on your own for the data you've entered (as I am pretty sure you are for Android Market) unless they have their own storage to the cloud or something?
Your data in your apps is backed up to iTunes, too. (Or iCloud, if you're backing up to that). If you delete your data, I'm not sure how to get it back other than doing a full restore of your iPod, though.

Well, it will give you a bunch of screens, but there is a limit. I have, in fact, filled up all the screens so that new apps have nowhere to go (nowhere to go that I can scroll to, that is) until I put some in folders.. Yes, I am embarrassed.

I do! I put the CI app on the iPad, stretched, but it's still portrait mode only and somehow reading the recipes off of the phone seems just as easy, maybe because it is easier to perch the phone various places in the kitchen. The integrated timers are pretty nice.
