Does iOS only give you extra screens when you fil up the ones you have?
By default yes, but you can manually drag an icon onto a new screen if you want to.
[eta: Upon testing, how it works is when you start moving apps around, it gives you a new blank screen automatically. When you exit the edit mode, any empty screens disappear.]
You can also arrange your apps in iTunes, which is usually easier than moving them around with your finger on the screen.
Okay, I will test arranging them in iTunes later today.
ITunes backs up your apps that you've bought (the same way Android Market does). Are you on your own for the data you've entered (as I am pretty sure you are for Android Market) unless they have their own storage to the cloud or something?
Your data in your apps is backed up to iTunes, too. (Or iCloud, if you're backing up to that). If you delete your data, I'm not sure how to get it back other than doing a full restore of your iPod, though.

Well, it will give you a bunch of screens, but there is a limit. I have, in fact, filled up all the screens so that new apps have nowhere to go (nowhere to go that I can scroll to, that is) until I put some in folders.. Yes, I am embarrassed.

I do! I put the CI app on the iPad, stretched, but it's still portrait mode only and somehow reading the recipes off of the phone seems just as easy, maybe because it is easier to perch the phone various places in the kitchen. The integrated timers are pretty nice.

I hope so. I just sunk beaucoup bucks into a new android handset. I finally tossed the BlackBerry. Just couldn't deal anymore.
