This would only work if your phone can make calls using WiFi. Some can only surf the web. My phone does, but if I solely had to rely on WiFi for service, it's almost useless. When I really need the phone, I'm not in a position to be picking up a WiFi signal.
Since your carrier is Verizon, the first thing you need to check is if your phone is a world phone. CDMA equipment does not work in Europe at all.

Well, no--it lets you use google maps and email and check buffistas, of course. The really IMPORTANT things. :) But only phone if you're using something like Skype or Google Voice. And no texts (which I feel like you ought to be able to send texts via wifi....maybe with an app?)
But yes, Airplane Mode with WiFi is how I always have my phone when I'm in foriegn countries--I love my iphone, and if nothing else want to check the time on it since I never wear a watch! But there also tend to be enough places (hotels, cafes, airports, museums) that have free wifi that I can catch up a few times a day. Because I'm addicted ot the connectivity.

No clue--I'm only speaking of doing this via Skype-on-your-phone, which you brought over from the US and are using with WiFI.
