And tofu. It doesn't take very much tofu to make pad thai, which is what I had for dinner. What the hell do I make with the rest of this tofu?

glad things are good!

I am enjoying my course load this year and my students are interesting. But I've been sick off and on and am missing a lot of school (when I finally go back, I'll have been out for 2 weeks) so my kids are all adrift.

Grad school? oof. Victorian lit, while easier than Chaucer, not my bag. And Chaucer in Middle English just makes me feel stupid.

What the hell do I make with the rest of this tofu?

I'm serious on this: cut it into slices that are maybe 1/2 inch thick at the most; wrap each slice in plastic wrap; freeze the slices overnight; next day, unwrap the slices and press them between paper towels to get any additional moisture out (the freezing will have removeda good bit of the moisture); then fling the slices in a baking dish, dump BBQ sauce (or any sauce you desire) on top, and bake at 400-ish for 25-30 minutes.

The result has the texture of chicken, and BBQ sauce (which is my only experience with this recipe) has such a strong flavor that that's all you taste. So it's like baked chicken.

Lee is me in this. You would think that I, being a Professional Editor of Stuff, would (a) remember that using "hopefully" like that is wrong, and (b) care. I don't.
