I can brine for eight and dry overnight. Is it worth doing if I do it for 12 hours?
Yes.
And I'm, y'know, blonde and bland and pale and chubby fat and I'm cranky and difficult and make it really hard for people to even get to know me, much less love me, and I have huge issues that make me an emotional minefield.

Actually, I just looked at AB's recipe I linked and it only calls for 6 hours of brining. I think I made it 8 hours in my mind because I do it overnight, and overnight=8 hours. So that will be a couple more hours for air drying, crispy skinned goodness!
