Trudy, I've brined and fridge-dried. 24 hours I think is optimum for the drying... and ~8 hours for the brining (we do it overnight)

Don't worry about the butterflying, that's sort of a niche technique (though delicious!) but brining is everywhere.

you can run a search at foodtv.com or epicurious.com and find some different brines... there will be variations on flavoring of the brine, amounts of sugar/salt, etc.

I think last year we just did the one in the Big Book of ATK/CI Best Recipes. I recommend grabbing it from the library for Thanksgiving if you can get your hands on it. [link]

That's just us, though.

I have way too much work, both 9-5 and freelance, and I'm SO OVER these cramps, and The Boy's ex is in town this weekend. Glurg.

This is the ex who is the polar opposite of me -- she's this outgoing, really bubbly, friendly extroverted person, and she's all dark curly hair Latina stunning, and she's, like, LEGENDARY and beautiful and everyone loves her. And The Boy lived with her for 4 years and almost married her.

Stressed? Me?

I'm this introverted, socially retarded misanthrope who would much rather read comics or a treatise on the semi-colon, for god's sake, than go be all bubbly and bouncy and effusive in a crowd of hundreds. And I'm, y'know, blonde and bland and pale and chubby fat and I'm cranky and difficult and make it really hard for people to even get to know me, much less love me, and I have huge issues that make me an emotional minefield.

So this should be quite the weekend.
