Frittatas are easy, if'n you have the right pan. Just put the non-egg ingredients in the pan first, then about 6 or 7 eggs, stir a bit, let set (about 5 or 10 mins), then put in the broiler to brown the top (about 3 mins). Let sit for at least 5 minutes, although I like it closer to room temp myself.
