While I'm here, why doesn't peanut butter need to be refrigerated? Also, is it the caffeine in coffee that makes it so it's not good for hydration? Does that mean black tea is less bad and herbal just fine?

Yes, caffiene is a diuretic. (Though I remember reading some months back that coffee can still count towards your daily 8 glasses of water, according to whichever authorities keep track of such things. It'll just hydrate you more slowly.)
