For me, it's something about the crumb and the way the gluten forms about the air bubbles. I could probably base my decision on B&W closeups, and ignore the ingredient list.

Real breads use yeast, and they can be sweet, but generally aren't. They may or may not use eggs. I have a recipe for banana-chocolate-chip bread, which is a yeast bread. It doesn't taste like the banana bread you usually get. Yeast breads require kneading.
Quickbreads use other leavenings than yeast, take less time to prepare, and are closer to cakes. They are almost always sweet (although my beer bread and soda breads are not). They usually use eggs. No kneading required.
Cakes are sweet and use no yeast. They usually use baking powder or baking soda as leavenings, and eggs.

Chikat, is challah a cake then, in your mind? Because, my thought was no, and that takes 4 eggs. But brioche, yes, and that is several eggs. Both of them totally drown in butter, too.
Well, poop. You just robbed me of my efficient definition because I do think of challah and brioche as bread. Hmmm...maybe I can adjust.

Hmm. Ties into my crumb thing -- if you pour, it's not bread. If you can roll/knead/arrange, it's more likely bread.
