And of course I'll come make some enchiladas! Did you ever try making them yourself? How did they turn out?
I haven't yet. I'm so confused as to how to go about cooking the chicken bits. I don't think I'm supposed to wrap them in the enchiladas still frozen.

Um, no. You cook the chicken up (usually in a skillet until it's no longer pink). Then shred it and fill up the tortillas. Then pour on the sauce and bake. It's easy-peasy if you cook all the stuff that goes into/onto them first and then do the filling, folding parts.
Ooh, I know this! ATK tested it out and found the easiest and best way is to cook the chicken bits right in the sauce - simmer for about five-ten minutes and the chicken is cooked and flavored and stays moist. Once it's cooked, remove it and any other filling stuff and mix with the cheese or whathaveyou.

They got a shit ton of money from me, so yeah, they do.
Hey Cashmere, I heard the great news. Congratulations!
Thanks, Denise. I'm still waiting a bit to post it on LJ. I'm one of those "tell everyone as soon as the stick turns pink" kind of folks. Tempting fate, maybe, but I suck at keeping news like this a secret.
Cash did you post an enchilada recipe? or someone else?
I did in my lj recently - don't know if that's what you're thinking of.
