What is the most out of character moment for each of the main characters during the run of the series?
Is it better the second time around? Or the third? Or tenth? This is the place to come when you have a burning desire to talk about an old episode that was just re-run.

I assume you mean when there's no in-story explanation for the behavior (a la Band Candy)?
There was a moment in season 7 where Giles made a bizzarely smarmy comment (I recall it as some sort of inneundo), that I think triggered Giles-is-Ethan-shapeshifted theory (coming as it did just after the poorly done fake-out of First!Giles). Even more than the other pod!Giles moments that season, that one struck me as most out of character.
Cordelia, during whatever episode it was where she yelled at Angel for being mean to pregnant Darla. You know, pregnant VAMPIRE Darla.
And although he was a one-season character, I still want to know why Principal Wood went down and cleaned up Jonathan (and how he knew he was there). I've always suspected they were debating a few different directions there (as they did when they tried out the Scrappy gang that one episode, then wisely ditched them).
Since I'm picking on Xander: Either the Anya breakup or the OMWF Sweet summonage - (honorable mention - braiding Willow's hair while watching indian soap opera in memfault, because huh?)
I'll vote for the Sweet summonage because of the way it was wrapped up. "Hey, just trying to make Anya happy -- and let's not talk about the dead people."
And while I won't say the Scrappy gang was the most brilliant idea ever, it could have been used as part of a return to high school theme for S7. Which would have been an improvement over the Potentials arc that happened.
Giles -- Just about everything he did to fuel the "is he or isn't he" debate in S7.
Riley -- Offering to become a vampire nummy treat.
Xander being the one that called Sweet.
Buffy pulling pranks in the episode where she is invisible.

I'll agree on Buffy's pranks because they were malicious and mostly aimed at strangers.

I'd say even more was not so much the summoning but the not copping to it when people started immolating.
