Also, I'm the cast iron skillet's bitch. It's a pan, And a weapon. You really can't ask more from any kitchen utensil.
Mine was my grandmother's. It survived our house fire when I was in college. The one that burned the kitchen completely. We dug the skillet out and it cleaned up very nicely.

Well, there are two things -- if I'm trying to get rid of the fat, putting it in other foods I also eat doesn't count as success. If I'd been grilling, it would have disappeared. Second -- I don't like cooked peas and carrots, so I'd totally be tossing them.

But I'm not getting rid of the fat for the sake of getting rid of the fat. I just don't want my lamb chops too greasy. In other words this is a treat I make when I've decided to throw out the calory counting. But I still don't like the lamb chops too greasy in flavor. Skillet lamb chops cooked as I've described are tasty -but nothing comes out too greasy. You have the flavor, but not greasy feeling in back of your throat. It is not low-fat or low calorie, but it tastes good and satisfies. Everyone needs stuff like that on occassion.

As to not likeing peas and carrots: if I ever have the chance to cook for you - (maybe you have to pass through Olympia for some unknown reason) I'll find out your preferences before I make anything. I know you have some strong issues with what foods you can enjoy, and I guarantee I can come up with something you'll like, avoiding all the stuff you hate or find meh. It probably won't be a high fat dish like lamb chops, but the option remains if everyone is in the mood.

Also -- not telling you how to cook lamb. I grew up in a hypertension-research household. When I dump the fat, I really dump the fat.

Though, now that I think about it, I'd also be tossing the lamb, because I don't like that either.

Very low cal meal, when all is said and done.
