Esp. roasted with olive oil and salt. Yum.

I adore asparagus. And if you do the bit ChiKat suggests, you can also add roasted hazelnuts and a lemon butter sauce. I made this once for Easter and Mom begged me to make it every time I cooked for the family for a couple years afterwards.

artichokes, yum. It's been a long time since I worked through a whole artichoke. But the hearts are yummy and keep me sated.

On the side of asparagus and most vegetables, especially dark green leafy ones. And sweet potatoes. I am obsessed with sweet potatoes as of late. Is there nothing they can't do?
