Loreena McKennitt has two wintry albums, A Winter's Garden and... something else. I agree, they're both gorgeous. Sadly, I only had them on tape, and many of my tapes got lost in the maelstrom of moving, and I can't find either one anymore.

Winter Garden, not Winter Cafe. Check. It's that one, I believe. Her version of "God Rest Ye" raised all the nerves at the nape of my neck. Just exquisite.
