Unless we assume the evil force was somehow keeping her alive, but then why would it let her age?

I don't know how he would stop her from aging. He did keep other people away so he could continue to feed off her but I don't think he had any powers beyond the paranoia stuff. Oh and the tentacles.

He kept her alive and physically relatively intact. That to me suggests serious mojo. But I'm willing to accept that he just couldn't sdtop the aging.

I just figured she had groceries delivered, and the monster kept away the people who would have turned of the water, etc.

No. I don't know where she got any money for groceries. But I don't know how Angel got that mansion (on BtVS), if he shaved, why he'd been alive for 200+ years and never developed an investment portfolio, how vampires get...engorged, or how Spike's roots kept growing out, either.
