If the goal is surprise, however, the addresses can't be on a list like the Laistas, for example.
Because someone on the list might be the surprizeee. So it would have to be managed as individual address, I think.

I was thinking very low-techly. You have an e-mail with all the addys and you snip out the one(s) you don't need.
I just thought that whoever collects the e-mails will have a list, with both board name and an e-mail address for each person who wants in. Then, whenever somebody wants to surprise Buffista X, an e-mail is sent to every member of the board who is on the list, other than Buffista X (in fact, regardless to whether that X person is even on the list at all).
Therefore, all it takes is collecting the names/e-mails, keeping a file of them, updating that whenever another Buffista wants to opt-it, and use it for circulation whenever the time comes.

If you're list admin, you have access to all the e-mail addresses of the members. You just have to remember to take out the one of the intended.

Maybe you should both keep a copy, just to build some redundancy into the system in case someone wants to do something while one of you is away. Also makes it easier if someone wants to surprise one of you.
Deena, the only reason I offered was that I thought this will be my way to contribute, seeing as usually I have a hard time taking part in these lovely surprises (different currency, no international credit card, etc.). I definitely didn't mean to step on any toes.
