I bought a chuck roast for $23.00! Which seems ridiculous, but food is so expensive that sometimes I think it is cheaper to eat in the cafeteria at work than cook. But I want stew. So my plan is keto beef stew in the instapot with rutabega, turnips, celery, onion, and parsnip. Hopefully a whole lotta meals!
I'm making red lentil curry soup with coconut milk. I didn't have any actual curry powder, so I substituted garam masala. Should work, yeah?
That sounds so good! I really struggle with the diabetes whether I want to continue on the keto life, where I can't even have beans, but my medication needs are reduced. But I would love to have a red lentil curry.
It turned out really good, mostly because of the lime at the very end. And I added a bunch of kale.
I found these limes on the street in a box: they're makrut limes, still kind of orange on the exterior, but really tasty.

One of the beautiful things about the InstaPot is the ability to make a small amount of a long cooking dish with minimal effort. I bore easily when it comes to food, so I have a hard time making a big batch of something and eating it for days. So, I can make one or two servings of something and eat it before I get tired of it.

I tend to avoid bean dishes because I just dislike the texture of beans, especially big ones. So if I make chili, it's lentils.

True. Also agree on the lime, and a preference for lentils over beans. I like the texture of lentils. I'm not keto right now, although I will likely give up and go back to it soon.
