It turned out really good, mostly because of the lime at the very end. And I added a bunch of kale.
I found these limes on the street in a box: they're makrut limes, still kind of orange on the exterior, but really tasty.

but I'm at the point where I'll be glad to see the end of it and have different things from day to day.
One of the beautiful things about the InstaPot is the ability to make a small amount of a long cooking dish with minimal effort. I bore easily when it comes to food, so I have a hard time making a big batch of something and eating it for days. So, I can make one or two servings of something and eat it before I get tired of it.

Mmmmm. I have little to add this morning.
I tend to avoid bean dishes because I just dislike the texture of beans, especially big ones. So if I make chili, it's lentils.
I really struggle with the diabetes whether I want to continue on the keto life, where I can't even have beans, but my medication needs are reduced.
Although I am not diabetic my doctor says the keto is the best for me because I have always been borderline and all 3 of my siblings are diabetic.

True. Also agree on the lime, and a preference for lentils over beans. I like the texture of lentils. I'm not keto right now, although I will likely give up and go back to it soon.

I actually love a pure meat chili, but I enjoy all kinds -- DH likes lots of beans, so his are very beany. Three kinds in the latest round. Lentils are just always good no matter when or how.
My orthodontist confirmed at my last appointment that she thinks I'll be done with the braces in four to five months, which will put it at just under a year with these things. Yay. Will not miss them one bit.

That's what I switched to when I went on a low carb/high protein diet. I use ground hot Italian sausage and ground beef. I will add mushrooms but otherwise it's meat, onions, jalapenos and tomatoes. And I hit it with every umami thing I've got in my spice rack. Then I serve it with melted cheese, salsa and a dab of Greek yogurt (which serves all my sour cream needs with more protein).
I always default to "but beans are full of protein!" And they are, but I forget they're starchy, too, and therefore problematic for people who are avoiding starchy foods. I love a bean-y chili.
I had insomnia so bad last night that I'm not 100% sure I'm awake right now. My brain feels like it's been replaced with dirty gym socks.
