That's not as bad as what I was imagining. So I guess I *did* want to know. Thanks! It still seems like a) not really lasagna, b) a bit over salty, and c) not quite what I'd be looking for in texture. But I guess if you really want something lasagna-esque, you do what you have to do.

I just had tuna on top of cauliflower thins (in lieu of bread) and that works fine.
Also, I get Ozery little sandwich bread things (like very skinny English muffins) and toast them and those serve a lot of my low-carb eating needs.
I'm having trouble imagining the sliced meat noodle lasagna. Hm. I feel like I would not be able to cut through it with a fork like I expect lasagna to work? Maybe I'm imagining the lunch meat wrong. Meat and cheese and tomato sauce and more meat does not exactly sound bad, though.
I've had the sliced zucchini variety of lasagna and it is tasty. I'll go back to keto at the beginning of the year because it is the only diet that worked for me. I did it a year, and I can do it again easily enough. I get plenty of fiber, mostly from yummy blender drinks with avocado, psyllium, and other stuff. Also, I eat lots of salads and other low-carb veggies. Even berries, which have a lot of fiber. The big thing is tracking everything on an app to be sure your fat content is high enough. When it is too low (under 70%) then I pop a handful of macadamia nuts because they are 90% fat.
Before diving back into keto I am eating pasta, sushi, fruit, and oatmeal that I can't really manage too well once I am back on the wagon. The super low carb tortillas are indistinguishable from real ones for me, and great for wraps.
I was queen for a day today! My face, fingers, and toes are all shiny and happy.
Hello! I've been more or less lurking while skipping and skimming. I've had this horrible head cold and been less than my best, but I'm alive and pretty much well.
I saw there was concern that I wasn't posting ... due to the skipping and skimming I'd have a response to something that was from days before.

This recipe replaces the noodles with sliced lunch meat
I EAT keto, and this seems weird to me. I basically replace lasagne with a casserole that includes all the ingredients except the noodles, and a vegetable. I will say that cabbage leaves made and baked liked stuffed shells was actually a hit at my family’s 2019 Christmas. I made a regular lasagne for them and the cabbage stuffed shells for me, and my mom and uncle both liked the cabbage version.
