TCG is only working two days this week, and ltc is in school 3 days. We need Wednesday without her here for meal prep.
Laura, that recipe looks great. Bookmarking it for later. I really need to start eating better as well. In the middle of all of the medical tests for the shoulder/neck issue, my sugar was high. Not scary high but not good. After Thanksgiving.
The plan with the leftovers is to not have to cook again until Monday and then freeze whatever is left.
I just heard from a single woman at church that she is making a 16 lb turkey, as she always does! She has one or two people over for Thanksgiving and then freezes the rest to eat all winter!
Yay for Laura and DH. In happy news, here's baby panda vet visit. He's getting bigger, getting very wriggly and is starting to get teeth.

My fridge and freezer are full. Somehow I am buying more food for thanksgiving. Just the two of us. I have no idea how this is going to work....
It's just the 2 of us for Thanksgiving this year, but we're cooking with the intent to have leftovers of everything but the roasted broccoli (because it doesn't reheat well) (I mean, you can reheat it, but it loses that roasted crunchiness, and that's just sad-making).
The smallest turkey I could get was 10 lbs., so we'll definitely have a lot of leftovers. True confession: I stuck the frozen turkey in the fridge on Friday "for a second" with the intention of checking how long I actually needed to let it thaw in there and then stick it in the freezer until that time. Which I completely forgot to do. Why didn't I just stick it in the freezer in the first place? GREAT question. I have no idea. And now it's thawed, and we kind of have to cook it today and certainly by tomorrow. So. We will have turkey on Thanksgiving, but we won't roast the turkey on Thanksgiving. I roll my eyes and shake my head at myself.
