I am an advocate for breakfast pie. Also? fried fruit-filled hand pies, crust sprinkled with whatever spices go with the fruit. Apple=cinnamon, peach=ginger, cherry=a little anise and cardamom, etc.

I made lunch mini pies the other day - apple with brie and ginger, and fig with goat cheese and proscuitto.

I definitely support pie for breakfast. Mom baked me a pumpkin pie for my birthday and I made almost as many breakfasts from it as desserts.

Here's to lazy, snuggle-y Satudays. We are also visiting my aunt for the first time since the before times, on her deck with masks. Then Walgreens and Aldi, then in for the day and relaxation. Probably a walk later.

baked oatmeal recipe

Basically, per serving, you want 1/2 cup wet ingredients, 1/2 cup oats, and flavorings. Bake the mixture at 380 for 20 minutes.

It can be super simple, or very fancy, depending on how you are feeling each morning. If you have enough ramekins (or pyrex bowls) you can mix a few and have them in the fridge ready to pop in the oven while you shower and get dressed in the morning.

Wet ingredients can be mashed banana, pumpkin puree, applesauce, milk, whatever you have around). Some fat helps: I usually dallop some coconut oil in the bottom of the container, it melts while baking and soaks in. Or a tablespoon of a nut butter, I guess dairy butter would be fine if you like that kind of thing ;P A pinch of salt is a must, and a dash of vanilla extract makes it extra desserty. Add-ins are great for texture. Chopped nuts, dried fruit, chocolate chips....it's all good.

Have I mentioned how much I love baked oatmeal? Sometimes I have one for dessert. With chocolate chips, of course, and a drizzle of honey over the top that crystallizes. Yuuuuummmm.

edited to fix link. Also to note that there is an added bonus of making your kitchen smell amazing. Oh, and works great in a toaster oven, no need to use the full oven unless you are making a big batch. Approximate ration of 1=1/ wet=dry for rolled oats. Steel cut needs more liquid and longer bake time.
