Yum. DH has joined me on the serious diet boat so he had an oatmeal creation and I had a bullet drink getting our fiber/protein/MUFA measures met in a tasty way. I do have apple cider in the fridge so I'll enjoy some of that later.
Oh, I did a quick Google on baked oatmeal recipes. Oh my! Some of these look really good.
I made pancakes, close enough.
I have to say, I've tried like 500 pancake recipes in my life, but the Joy of Cooking Four Grain Flapjacks are still my absolute favorite. Strong recommend.
I had to google MUFAs! I know the concept, but I didn't know the acronym. Yay DH for joining you on the health wagon. DP is working his way pretty well around to it now, too, with recent blood tests and diagnoses. I am trying to align our eating habits to what will suit him best, because, well, it'll suit me best, too. Crazy how that works. And we're starting an evening walk routine to ease into more physical activity. All to help avoid, you know, an evening ER routine.

Different, but for some reason that reminded me of the cornmeal pancakes that IHOP had for a short while. They were so good! I was sad they were only a blip on the radar.
Now that I am back in Florida I can swim daily again, and need to get my bike tires functional so I can get biking. Summer could have been far more active, but I sat on the couch on my computer, which is good for nothing healthy.

They have cornmeal and its part of what makes them so good! Just that little bit of crunchiness really ups the textural complexity.
whole wheat, all purpose, cornmeal, and oats (okay, so it's really 3 grains). Nice and fluffy from baking powder and baking soda. So good.
Ooh. I may need to look that up, Gris. That sounds yum. We live in the times of GF all-purpose flour, so yay.
(PSA: For some reason, I've had this urge to make clear that I am being "good" and sticking to my mandated GF diet. I do not actually think I need to do that here, so I will stop. It's annoying to ME, so extrapolating from there...)
Tim had a follow-up lung x-ray today, which showed that the pneumothorax seems to be gone, but there is a little fluid around that lung. Tim's doctor isn't concerned about it and said the fluid will just get re-absorbed. So everything seems okay, although Tim is still going to see the pulmonologist whenever they can fit him in.
Yay! And I'm glad Tim is still seeing the pulmonologist, if another episode like this can be avoided that would be great
