I have to do my least favorite thing (one of my least favorite things, anyway, I do have a lot of least favorites) - taking a letter written by a committee that I had no part in and sending it to "my counterpart" at our customers. Do I know what to say about it other than "here, have a letter"? No. Will I be able to answer any questions our customers may have? Also no. And I just read through the letter and it's either very badly written or our policy is very confusing. Sigh. Why they don't just do a mass email from higher up I don't know.
I need to remind myself that when I was looking for this job what I wanted was to be a cog in a corporate machine. I shouldn't complain when that gets amplified, I guess.

So, the casserole is good. I admit I prefer the condensed soup/evaporated milk, heavily buttered and cheesed bread cubes version. What can I say? But this is good, and it has peas and fresh mushrooms, so... vegetables! As it is, I have to GF the original recipe, but I honestly can't tell much difference, so... I'm good on all tuna noodle casserole fronts, I think.

No soup at all. Milk, mayo, flour (except I use cornstarch slurry, because GF), butter-fried mushrooms, frozen peas make up the guts. Well, plus (rice) noodles. Topping is buttered (GF) bread crumbs. Uh, I added cheese, too.
Yeah, fancy versions of comfort foods rarely taste better than the original, somehow. Although my friend who made me my first tuna noodle casserole in college (mom didn't like it, so she never made it, so I hadn't had it) made a white sauce instead of using cream of mushroom soup because that's how her family did it
Exactly. Someone did a fancified green bean casserole at Thanksgiving one year. Ha, ha, ha... no. There was 100% concurrence on that one.

It is casserole night at the Holts tonight. This one is a quinoa/chicken/broccoli with enchiladas sauce variety. DH can add cheese if he wants but it is off my list.
