I love the word spatchcocked. I also love the result of doing one right, but the actual word is just the best. I think I only learned the word and the method within the last five years, maybe? So much lost opportunity.

Thrive to spite them

I made another futile attempt to get a mailing label from straight talk...who's phone tree doesn't have a main menu item for warranty/repair work it's buried under I think 2 sub menus as "other".

So I'm giving up on trying to get the phone sent to them.

My options are now:

wait until the warranty runs out at the end of December and try to use Walmart's protection plan but I won't be able to do any updates for anything because my memory is so low.

Buy the same phone again from straight talk now (it's cheaper now anyway) and then try to get the other phone fixed.

Go with a different pay as you go plan/phone or a different carrier. Spectrum has an unlimited plan & I could get a better phone for what I'm paying for straight talk unlimited. But I'd be paying for that phone for 2 years.

I spatchcocked a chicken and it was tasty but I didn't enjoy the actual breaking it down. But it was so good.

Yay Cass ballot!!! I finally got my ballot in the mail (Oregon usually gets those out before I even realize there is an election coming up, this is a major delay, but it's ok, I'll still get it filled out this weekend and dropped off well before November.)

Y'all, have I mentioned that you can bake honeycrisp apples? Like, it's my favorite thing this year (ok, that's not really saying much.) Slice or dice, sprinkle of cinnamon (or pumpkin pie spice), bake at 350 degree oven for 50 minutes. Glorious. I've been getting fancy with crisp/crumble/cobbler toppings, and sometimes a splash of lemon juice before the spices. Last night I added lemon juice, a pinch of salt, a dash of pumpkin pie spice, and a punch of cardamon and I had Next Level crustless-pie goodness. Not that you couldn't dump it in a pie crust, I just don't like crust. But have done several types of crumble/crisp topping (mostly just oatmeal and coconut oil mixed together) and tonight I'm thinking about making some biscuit dough to make a cobbler topping and dumpling soup. Think chicken and dumplings, but with no animal products. It's cool and crisp and that just sounds perfect.

Try coring them, filling the holes with cinnamon graham cracker crumbs and sugar, putting a pat of butter on top, and baking them. Inside-out apple mini pies!
