When I cook for myself, my most common item are bean and cheese soft tacos.
Won't be doing a lot of cooking this week as our oven shorted out. Arranged a to get a new one, but it will be a week. A lot of the ovens we looked at were backordered.
Apple and peanut butter makes a good snack.
My go-to easy meal at home is cheese, crackers, an avocado, and one of those individual servings Well Yes! soups.
Though with a pizza parlor and bar & grill on either side of me and a dim sum place just down the street, I don't go to my go-to meal as often as I should.
I am home from dropping of ltc from school and eating oatmeal and tea for a late breakfast. TCG and ltc make a batch in the instant pot on the weekend, and we eat it all week. ltc has declared that all her shoes are icky and uncomfortable which added twenty minutes to our morning routine today.
It is only a slight exaggeration to say that making lunch every day has been maybe the hardest thing about transitioning to WFH full time. I'm saving buckets of money not eating out in the city every day, but I *hate* *making* *lunch*.
(Do not offer suggestions. I know *how* to make lunch, I just *hate* it. And now I have to figure out lunch for myself *and* at least one kid every goddamn day.)
I remember my mother-in-law saying she was sick of food. DH and I now really understand what she meant.
About a month ago, I declared we were having hot fudge sundaes for supper. My (adult) kids were shocked and appalled, but also intrigued.
About 11:30 that night, my 21-year-old daughter came downstairs, into the living room, and asked me if I was dying.
I'm considering doing away with lunch entirely and replacing it with a combination of elevenses and afternoon tea.
