Sometimes I trip on how happy we could be.

I should say "enchiladas" because I just used some salsa verde from the store and also flour tortillas because that's what I had, but they were delicious!

I decided to swing by walmart after work to get the soon to be new dog's insulin

Locally we found the best price for insulin for our diabetic cat is Costco, and if my memory is right you actually don't need a membership to use the pharmacy.

We had barley risotto and chicken thighs for dinner with broccoli. The only frozen broccoli I could get from my last grocery order was broccoli with with cheese sauce, and ltc hates it. What kid hates cheese sauce?

Given how I've been filled with Do Not Want today, I feel irrationally annoyed at how quickly I just made shrimp tacos with cilantro lime slaw. Making dinner was a task I didn't want to do!

Farmer's Market vendors have no shortage of meat, msbelle. And we can always store for you in our chest freezer if you feel you need to (Chesty L'Chill).

Unless you live in a food desert, I don't really understand how meat shortage is a problem? (Other than for the corporate farms and the animals they'll end up slaughtering, of course).

Our wings are not tired.

I had fish tacos and jalapeno margaritas. Super yum. We had a choice of chicken, beef, or mahi for the tacos. (plenty left over for lunches tomorrow) Spectacular guacamole, and they made grilled corn too. It was nice to have Tate's parents over. We ate in the backyard then moved to the driveway for sunset and more drinks. We made plans to go to the ice cream place where we can eat spread out in the parking lot for Mother's Day.

I had more of the vegan coconut curry I'm pretty sure would be served on rice, but I'm eating like a chowder. So good. Unveganized it with chicken since no protein all day. I happily watched my fav mexican food places sell out.

Besides the farmer's markets, a lot of local kosher & halal markets already work with small butchers & then of course penn Dutch, etc (I suspect a ton of crossover there, don't know.)

But then, I eat meat maybe once a week if that, so.

I'm looking at Donors Choose stuff in my neighborhood and there's one for binoculars for a bird watching project. That's great for distance learning, but what other interesting things are the kids going to be watching in high density neighborhoods?
