I decided it's time for me to start making layer cakes, so I bought cake pans and made a trial cake, and it's a good thing I did, because I couldn't get one layer out! Next time I'll put parchment on the bottom.

My one big problem with layer cakes is the way each cake domes in the middle, and then I have to carve the top off. I haven't figured out how to get them to bake flat on the top.

Most of the recipes I see say to cut the dome off, so I don't know that there is a way. Other than making different recipes -- the shallow layers I just made are pretty flat.
I am posting from a stage at intermission! This chorus and orchestra are way more relaxed than others I've sung with.

Rather than trim, I turn the domes toward each other and level it out with icing.
