Timelies all!
We took a bus tour that went to Kilkenny, among other places. Interesting, but a lot of time was spent dealing with Mr. S.(like the boat tour on the River Nor, where he kept dangling his hands off the side of the boat)
Tomorrow we take the train to Galway.
Enjoy the tours! Sorry about the struggles with Mr. S. Does he respond to bribery? I liked the stage where Brendon could be bribed. Alas, it didn't really last.
Ugh. We are under an Extreme Heat Advisory until Friday at 10 pm. I don't think I've seen one that long before.
As long as there aren't any fires I will not complain. Much.
Yikes t, what kind of temperature is it? I painted half my bathroom this morning, and am trying to decide if I want to go to the beach this afternoon (it's like 77 out?) or go buy the additional paint I need. Or in what order I should do those. Would paint sitting in a hot car go bad, for an afternoon?
Been fighting off anxiety attack all day. It feels like there is too much to do and I'm going to miss things.
I am dealing by plowing through work tasks until I hit roadblocks or the end of work in that specific task bucket.
For life, well lists I guess.
Tonight - gym, dinner, Bailey to sitter, pack.
Tomorrow - foster to sitter over lunch, show sitter how to do shots and deal with needles/insulin. Pick up at 6pm for flight.
That doesn't seem like so much, maybe my 2 Dr appts this week and having to get a scrip refilled (already done) are residually making me feel over scheduled.
The highest high is 108, meara. Do not want. I wonder if I can Miss Kitty a cool cave out of a cooler and ice packs. She might go for that.
108 is about 30 degrees too many for my taste!!
I decided to just get the paint and contemplate beach tomorrow.
I'm excited! I finally created a yogurt dressing (no oil no fat) that I like! And I didn't need food processor or anything.
Greek Yogurt
Teaspoon Balsamic
Lots of fresh finely minced dill
Kosher salt
Pepper
Green onion (minced)
And then the thing I

I wanted some onion and garlic umami in it but I didn't want to use raw onion or garlic. But I didn't want to spend a lot of time roasting anything.
So I took a thin slice of onion, and also sliced up one clove of garlic into three thin slices and then just cooked it over low in my best nonstick skillet (no oil). Flipped it over once. And it was much more mellow.
Chopped it up and mixed in. Flavor boost!
Poured that over my chopped up roasted chicken breast for a yummy chicken salad.
My mother made a vegan, gluten-free dinner for guests tonight, and it was delicious! Veggies over rice noodles with a nice gingery sauce, and also corn on the cob because it's August.
