Also seconding Laura's soup idea. We make butternut squash soup that essentially consists of boiling cubed squash in broth, pureeing, adding some honey, spices, and a little cream and that's it. We make it the day before and reheat it and add the cream that day.
Thanksgiving is a perfect time for roasted brussels sprouts, if you happen to be a fan of such things.

Kate P, tell me how to roast brussels sprouts like I'm 5.
I roasted brussel sprouts last night!
I take the brussel sprouts, wash them, cut off anything left of the stems, cut them in half if they're big enough, put them in a pan, pour way too much olive oil over them, mix them so that everything is coated in oil, add salt and pepper.
I cook them at 400° for 40 minutes, and make a vague attempt to flip the sprouts over halfway through.
Afterwards, I add a little more salt, and then eat. Yum.
