Mmmmmm, homemade croissants. The last time I attempted them I cheated by chilling them in the freezer for 20 minutes in-between folds (instead of an hour in the fridge). It seemed to work just fine!

Fortunately the attendees were all 9 year old boys so they didn't care as long as it had frosting.

It completely fell apart without eggs, of course.

Is the butter salted? Honestly, I could see the croissants being fine minus the added salt, depending on toppings, filling. They're all about the butteriness.

Oh, I've not told you about my new favorite market treat: spinach & feta croissant. It's glorious. And the Pumpkin tries to steal it from me.

I got about an hr reprieve between the migraine painless thing and a massive sinus headache, so that was fun. I'm blaming hormones and the weather being unsettled (chance of thunderstorms tonight. & it was in the 60s.)

From what I've learned from GBBO, salt interferes with dough rising, so salt-less croissants may be even more puffy.
