I looked at a fussy Saveur recipe, but no way I'm making homemade salsa and hard taco shells for a weekday dinner. But the potatoes themselves are easy peasy. Boil (or in my case steam) the potatoes until soft, then mash them with butter (lots), cumin, salt, pepper, and a bit of salsa in lieu of milk. OMG sooo good, so easy. Bonus: son likes them too. My daughter wasn't willing to try them, but she'll eat tacos made with a can of black beans so she's easy.
Perfect for the whole family, whether you're vegetarian, flexitarian, or gluten free!
I wanna try mashed potatoes seasoned that way.... tortilla shells not necessary. It sounds yummers.
Thanks, Calli. I am more at peace with waiting until I can talk with the other vet. I just can't deal with worst case scenarios right now. Without good, thorough info, thinking on it much is just spoiling the present.

Mashed potato tacos sound amazing! A place near me does them with fried potato chunks, which I would have called canyon potatoes, but apparently that is just me. Anyway, that is also delicious.

Me too!!! I loved that place (as a concept).
I just tripped coming down the stairs and somehow ended up on the tiptoes of both my feet, which promptly buckled forward and crashed me down. I possibly now have two sprained ankles. And I have two concerts Saturday.
