For us, it's a cold rice salad with tomatoes, potatoes, canned tuna in olive oil (or Simmenthal), marinated vegetables, eggs, onion, and peas. The longer it sits in the refrigerator, the better it tastes.

An Ecuadorian guy I used to date made something very similar as comfort food. Wait, I think that was eaten warm.Tasty, in any case.

Tuna mac&cheese (from can and box respectively) is, of course, a comfort food staple from college.

Dammit, I forgot my desktop crockpot insert, I'm gonna have to reheat my soup in the microwave. This is annoying me all out of proportion for TOTALLY LEGITIMATE REASONS

Burrell, what other kind of noodle casserole is there? I mean, I guess I've had other noodle casseroles, just not called that. In my head, tuna is the only noodle casserole!

In my universe, the ne plus ultra of noodle casseroles is the noodle kugel my grandmother made. It was savory, not sweet. No raisins, no cinnamon, just cream cheese, sour cream and butter. Decadent, slightly salty, so damn good! I have made it a couple of times in my adult life, but I worry that it's a heart attack in a Corningware dish.

Short version? Italian SPAM. But so much better than SPAM. It's jellied beef. One of my favorite ways to eat it is with tomatoes, basil, and a little olive oil. Oh, and some bread.

Move coordinator says we can pack & load on August 6th (Thursday). Which is not a day I had available. But I guess I can MAKE it available if I have to. I just have to cancel/reschedule a ton of meetings, and I have a great excuse.

I mean, I already have a hotel reservation Thursday-Sunday for VividCon. If I extend my stay another night, I can do a final walk-through on Sunday evening after the con and fly to SF on Monday morning. I have free bag check with Virgin America right now.

I can have furniture delivered on Tuesday along with a bunch of stuff I've been putting on my Amazon wishlist and get someone in to set up internet.

I think this could work.

I shoulda stood in bed.
