Honestly, I think the best grilled cheese requires a grill in a coffee shop or diner that has that built-up grill grease/flavor.

I do occasionally like to use mozzarella cheese in a grilled cheese, because the cheese gets all stretchy and string-y.

Diner grilled cheese is its own kind of delicious, its true. Especially with a bowl of chili or tomato soup. I also have great fondness for the "Killer Grilled Cheese" cooked by stoners over camp stoves in the parking lots of Dead shows. In general, I have come to believe that more butter -> more delicious grilled cheese, but I can't say I've met a grilled cheese I wasn't pleased to eat.

Looking at the time is right! I decided that I had to have grilled melty cheese goodness for dinner and here it is 8pm and DH isn't home yet. (decided on the tuna melt variety today)
