Non onerous is important in our house, and having frozen veg that can easily be microwaved means we'll eat veg more often than not.

They're clearly not destroying his health (although it would be nice if he were more regular, but what are you gonna do).
It sounds like focusing on just getting more fiber in his diet would be a good start. And if that makes him happier, then maybe he'd be willing to branch out a tiny bit more.

This sounds like the real issue to me, although I admit I don't know your SIL, but her reaction sounds like guilt to me. As you've pointed out, his eating may not be perfect, but it's fine. And whose eating is perfect anyway?

Oh, it 100% is. The problem with him being an autonomous adult is that he's resistant to moving to a care facility, so unless he's incapacitated, whether mentally or physically, he's staying put in his house. So we have to work with that, which means frozen dinners.
And I've posted about pancakes so much that now I REALLY want blueberry pancakes. I have both pancake mix AND blueberries...but it's 11 p.m., so I think I'll pass on the pancakes for tonight. But soon, man. SOON.
