I don't usually get this inspired on weeknights, but I have been planning to make this dish for a while. Hope it turns out good!

It wasn't that bad, but it definitely helped that I was pretty busy all day. I did cut out of the office half an hour early...
My SIL is doing this twice per week, because she's got a lot of cancer in her family and body fat is linked to that cancer. Me, I just want to keep my cholesterol and blood sugar down to reasonable levels.
Frankly, it seems easier than tracking calories and being obsessive about my food all week long. I'm sure there will be days that are harder than today was, though.
