Hey, Lee, I have your work address, which you said in the past was best for sending things to you. Is that still the case?
I've never roasted beets before, but I'm going to try it tonight. The method my cousin told me was: cut off the top and bottom of the beets, toss them in a 400-degree oven, and roast for 45-60 minutes, and when they're done you should be able to just peel the skin away.
Does that sound right, or does anyone have a different method they like?
That works fine. I don't cut anything off of them, though (besides making them delicious, I like roasting beets because I do not have to peel them or chop them when they are raw which I find difficult and messy) You can rub the skin off with wads of paper towels, or let the beets cool down and peel them with your fingers.

I was going to try the paper towel trick, because I want to eat them warm with some feta on top. Last week I had a beet puree with rice that was fantastic. I want to try that (or maybe with quinoa instead of rice), but not tonight.

A bit chilly here, but not as bad as it could be. Still can't wait for spring.
I have had 3 people in the last two weeks say something to me about dating. Finding me someone to date, saying I need to date (they did not say it as rude as it reads), suggesting I date someone. it's weird.
We are expecting another big storm starting sometime tomorrow. I need to hit the store as the kids are EVERYTHING while I was out of town. I REALLY don't want to go.
