Avocado and eggs is my OTP food pair. In egg salad is genius. I also slice it up to put inside omelets. There's no way to go wrong with avocado/eggs. Add cream cheese mixed with salsa in the omelet, my tongue goes in paroxyms of delight. If anyone is looking for more avocado recipes, I've got one for making a pesto sauce with it for spaghetti. It tastes so fresh, it makes a great spring recipe (it's even in the name).

J has gone off to a car event in Sweden. He managed to get the car company to buy him a ticket two days earlier than the event, so he is first stopping by Holland, to see my bro and SiL. They just moved from their house into a brand new penthouse condo, which overlooks the harbor. I'm so glad he's getting to see them and also jealous as hell.

A coworker at the house where I do all the lovely, healthy menu planning suggested including avacado in things on the grounds of yummy + healthy. I think I will suggest that since she does the shopping, she buy avacados whenever she sees a decent price, and they can add them to salads or whatever when I am not there. Avacados, while delicious, give me a tummy ache so they tend to be in a category of things I simply do not think about.

I have a CU that I love. Moving to a CU from US Bank has been revelatory. I didn't know banking didn't have to hurt! They're also wonderfully active in the community. I encourage the non-profits I work with to go the CU way, if possible. Generally more in line with NP ethics.

I don't trust doctors either, but at the same time, the measles vaccine is not some weird, unproven product.(In real life, most things are not all bad or all good--you have to use some judgement, people. Sometimes I think that part of this is that managed care has not been good for the doctor/patient relationship.

I take it back, Consuela; they call it a cream sauce, but it's got basil and garlic, so I'd still call it a pesto.

Avocado "Cream-Sauce" Pasta

Makes 2 servings

1 medium ripe Hass avocado
1/4 cup fresh basil, chopped
2 cloves garlic, chopped
3-4 tbsp extra virgin olive oil
1/2 lemon, juiced
1 tsp lemon zest
1 cup of frozen peas
1/3-1/2 small mozzarella ball (or as desired)
1/2 tsp sea salt
chili flakes and fresh ground pepper, to taste

1. Cook two servings of spaghetti in boiling water (~10 minutes)
2. When the spaghetti is 4-minutes from being cooked, add 1 cup of frozen green peas
3. While the spaghetti is cooking, place EVOO, garlic and lemon juice in a blender and mix until smooth. Next, add avocado, 1/4 cup of chopped basil leaves, lemon zest and salt, mixing on medium until the consistency is smooth and creamy.
4. Drain the spaghetti and peas and place in a mixing bowl, Scoop the sauce over the pasta and peas and toss to combine.
5. Garnish with red chili flakes, fresh ground pepper and cheese of choice (mild cheese that won't overwhelm the delicate flavors in the sauce). Serve immediately.
