Roast them, cut them into little cubes (being careful -- the juice stains, and it can get everywhere), and put them in a salad, with baby greens and walnuts and a citrusy dressing.

This is another easy way to cook beets:
And a delicious soup to make out of them (if you like caraway and buttermilk!):
I like them any way I've had them, but recently I had them just roasted w/ balsamic, and they were yum.
And what Sox & Hil & -t said! Delicious!
... just don't worry about colors of things for the next couple days after...
what. Someone had to say it.
One of my cousins is in a production of Billy Elliot in LA, and the kid playing Billy (they just cast one kid for each of the kid parts, since it's just five nights a week and only for a few weeks) broke his arm a couple of days before opening. They got one of the other kids who'd played Billy in the touring company to fly in, and learned the new staging and choreography in four days. I'm really impressed with that -- learning new choreography for something after spending months doing different choreography must be really tricky. The show's getting pretty good reviews, too.

So true.
Seriously, you aren't peeing blood. Or pooping blood. You ate a bunch of beets. I forget this sometimes.
I don't think I have ever had goat, but I love lamb, so I will have to try it sometime.
Elk is the bomb-diggity.
TCG had Elk for our wedding dinner. It was so delicious! I had the duck because I can never resist duck.
I was a picky eater as a kid, unless my Papa (grandfather) made it, and then I would eat it. He got me to eat lamb when I was young by telling me it was a different kind of chicken. I would also eat just about anything that you put on pasta when I was a kid.
I grew up eating caribou (elk), moose, & salmon. I would still eat all of those proteins to the exclusion of everything else if I could. So delicious.
I was not picky, really, but things like casserole & goulash were never to my taste, and still aren't. But, I always ate all of the vegetables available, so I think Mom felt like she was getting a good deal.
Went out to dinner with my friend and neighbor who is moving out of state next week. Not a banner month. She got teary, I flat out told her I'm not believing it, she can bite me.
Maria and msbelle, you'll be amused (or bemused) to know I'll be packing up her fragile china and glassware some night this week. Maria, yours survived, right?!
I know have a stainless steel, full sized french press thanks to -t! Even counting shipping, a better deal than I'd been able to find (and since I was apparently was not going to do it on my own, much more timely.)
