Roast them. It's the easiest thing to do with them, and delicious.

Roast them, cut them into little cubes (being careful -- the juice stains, and it can get everywhere), and put them in a salad, with baby greens and walnuts and a citrusy dressing.

One of my cousins is in a production of Billy Elliot in LA, and the kid playing Billy (they just cast one kid for each of the kid parts, since it's just five nights a week and only for a few weeks) broke his arm a couple of days before opening. They got one of the other kids who'd played Billy in the touring company to fly in, and learned the new staging and choreography in four days. I'm really impressed with that -- learning new choreography for something after spending months doing different choreography must be really tricky. The show's getting pretty good reviews, too.

I don't think I have ever had goat, but I love lamb, so I will have to try it sometime.

Elk is the bomb-diggity.

TCG had Elk for our wedding dinner. It was so delicious! I had the duck because I can never resist duck.

I was a picky eater as a kid, unless my Papa (grandfather) made it, and then I would eat it. He got me to eat lamb when I was young by telling me it was a different kind of chicken. I would also eat just about anything that you put on pasta when I was a kid.
