Ha! I did not know that at all about MSCL. (For the record, I started the Tino thing - he was an actual guy I had to work with for a once-a-year event when I lived in GA. And he did not respond to emails and his voice mail was always full.)

I need hivemind help. I have twelve frozen pig legs that I need defrosted by 8:00 am. I want to leave work. Should I leave them out to defrost or put them in the fridge. If they are not defrosted it is bad, but I also don't want them to smell. Smelling is slightly better than not defrosted because they need to suture. They do have to last until 11 am.

When I put them in the fridge, no defrosting happens because it is a mini fridge and it is so small.

I would leave them out if I wanted them defrosted if in the morning so I could, say, cook and eat them. Unless it's 90 degrees where they will be overnight, I guess?

In a sink with the water running would be ideal, but not, in this case, practical it sounds like.

I can leave them in a giant plastic bin, which is what I am going to do. I have access to a sink in the morning, but you have to stand on the foot pedal to make the water run!
