I'm thinking about making a pot roast (tomorrow, I guess, at this point), but what I really want is buffalo chicken dip! Woe. Also, I saw a recipe for empanadas using Pillsbury corn biscuits (which apparently exist) -- does anyone have thoughts about if they would be freezable? I'm sure the filling would be fine, and the dough should be too, right?
Buffalo chicken dip? Never heard of it before, so I had to look it up. My first reaction is surprise that someone could be craving either pot roast or buffalo chicken dip (already an apples/oranges kind of comparison), but be willing to settle for empanadas.
Conclusion: Jesse is hungry. Please feed her.
I'm not actually planning to eat the pot roast any time soon, but wish I had some meat in the freezer. And then thinking about food reminded me of the empanadas!

I would think so. I think the only issue with freezing the dough might be losing some rise, and that doesn't seem like a big deal with empanadas even if it happens, which it might not.
Do you know of there's much of a farmers market/CSA scene there? A good library system? Any decent cross-country ski trails out in the county?
Farmers market, yes. Not sure about CSAs. I think there are some, but your options may be limited. Library system is pretty good.
I'm not a cross-country ski person, but I think there's the Kal-Haven Trail, the Kalamazoo River Valley Trail, and there are probably trails at the Nature Center.

Yeah, that's basically what I'm thinking. You use half a biscuit and roll it out anyway, so I'm sure there's not much rising anyway. Good one!

Oh my god, people, not buying a house is exhausting. We decided not to get in a bidding war. The house had good bones but so many things need to be done that it just added up to too much.
Seems like a good call. I hope you guys can find something that suits you that isn't quite so in demand!
