So, does anyone know anything about Kalamazoo, MI?

I grew up in a small town nearby and also went to a nerd magnet school in Kalamazoo. I'm there frequently when I visit family.

While there is a conservative Christian element and some of my family members are Tea Partying it up, there are two colleges (Western Michigan University and Kalamazoo College), a theater scene, a museum and planetarium. The food scene is mostly American and Italian. Great beer, though. In the summer there are a lot of festivals downtown. It has an airport and an Amtrak station.

I'm thinking about making a pot roast (tomorrow, I guess, at this point), but what I really want is buffalo chicken dip! Woe. Also, I saw a recipe for empanadas using Pillsbury corn biscuits (which apparently exist) -- does anyone have thoughts about if they would be freezable? I'm sure the filling would be fine, and the dough should be too, right?

Buffalo chicken dip? Never heard of it before, so I had to look it up. My first reaction is surprise that someone could be craving either pot roast or buffalo chicken dip (already an apples/oranges kind of comparison), but be willing to settle for empanadas.
