Oh, and I put a couple of chicken feet...for the extra gelatin...in the pot. I've never, ever in my life purchased or even contemplated a chicken foot before. Now, I'm all about it.

It seems to be to broth but left on the stove for a long time. So, in my world, broth. I have turkey simmering now. And some ham bone stock that I am reducing. Christmas was good in the carcass category.

Gosh, brenda! What everyone else said.

Bone broth is essentially what Cass said, with the added element that you simmer the bones and scraps for at least 24 hours with a small amount of vinegar. The acid draws the minerals and other nutrients into the 'stock', making a richer, more flavorful and nutritious broth that can be used in many, many ways.

As Steph said, it is widely suggested as a curative for gut ailments in large part due to the gelatin leeched from the bones.
