You actually could freeze it before putting the cheese in and then melt the cheese into it when you reheat, probably.

I still have kale and pumpkin to deal with, but I think they can both wait at least a couple of days. And the pumpkins are decorative, meanwhile.
My head of broccoli was smallish so I roasted like a cup of cauliflower and a little kohlrabi along with and the soup came out thick and creamy! I think you could even leave out the cheese, really, if you wanted something totally vegan.
Successfully talked myself out of buying coffee at Starbucks when I have perfectly good coffee at home. Enjoying that now and trying not to be convinced by a cuddly Pumpkin to nap. Cause I have cleaning and de-acing to do today!
Also, she was very close to my mom's age, that always makes me a little anxious.

This freezing of vegetables thing is something I should try. Except our freezer is tiny.
The muffins are very tasty but look, um, not good and are kind of problematic as finger food.
t, what sort of low-carb or high-protein finger breakfast foods have you found? I'm having a hard time figuring out what I can eat for breakfast that isn't super carby, and I think I need to (not really trying to cut carbs, just trying to cut "breakfast that is entirely carb", which is most things I can purchase at the coffee shop)
I've been making these "muffins" that are meat and cheese and an egg-cream mixture, baked in muffin tins (silicone liners = awesome). A little greasy to eat with one's fingers, but slightly more manageable than a plate of bacon and eggs. Or, like Atkins bars and shakes, I rely on those pretty heavily, really. Oh, sometimes a chunk of cheese and a piece of fruit (not really low carb, but I figure one piece of actual fruit is always okay, because it just is, okay?) - no cooking, and no plates!
Disclaimer: I'll eat a piece of quiche with my fingers, too, so maybe my standards for finger foods are, um, liberal. One of these days I will get off my ass and buy myself some mini springform pans and make a bunch of mini quiches to have ready to eat.
